From Brazil to Caffeine: A Coffee Built at Origin

A year on from our sourcing trip to Brazil, we are proud to introduce one of the coffees we selected at origin – now available as part of our retail range.

This is our Brazil Single Origin from Fortaleza Farm, located in the Cerrado Mineiro region, one of the most respected and consistent coffee-growing areas in the world.

During our visit, we spent time with Fernando Afonso Junqueira, the producer behind the coffee, walking the farm, understanding the processing methods, and seeing first-hand how quality is built from the ground up.

This is not sourcing from a catalogue.

This is sourcing through connection.


Why Fortaleza Farm

Fortaleza Farm represents everything we look for when building our coffee range:

  • Consistency at scale without compromising quality
  • Deep understanding of processing and flavour development
  • Long-term commitment to sustainability and land management

Located in Patos de Minas, Minas Gerais, at altitudes of up to 1,300 metres, the farm benefits from stable climate conditions that allow for controlled, high-quality production.

The coffee is also Rainforest Alliance certified, reinforcing responsible farming practices that support both the environment and the people behind it.


The Role of Processing: Natural Coffee Explained

This coffee is naturally processed, meaning the coffee cherry is dried with the fruit still intact before the beans are extracted.

This process is key to its flavour.

Natural processing allows sugars from the fruit to interact with the bean during drying, resulting in:

  • Increased sweetness
  • More complex fruit characteristics
  • A fuller, more rounded body

When done well – as it is at Fortaleza – it produces a cup that is expressive without being overpowering.


In the Cup: What to Expect

This is a refined expression of Brazilian speciality coffee, moving beyond the traditional chocolate-heavy profile many associate with Brazil.

Instead, you’ll find:

  • Floral notes that lift the cup
  • Gentle berry acidity that adds brightness without sharpness
  • A smooth, lingering finish that makes it incredibly drinkable

It is balanced, elegant, and designed to be enjoyed across multiple brewing methods.


How to Brew

Like all coffees in our range, this has been selected not just for flavour, but for versatility.

Best enjoyed as:

  • Espresso
  • Filter
  • Cafetière

While it performs beautifully as espresso, this is a coffee that really opens up in filter, where its clarity and sweetness become more pronounced.

A Micro-Lot Worth Paying Attention To

This coffee is a micro-lot, meaning it is produced in limited quantities.

It will not be available indefinitely.

Micro-lots allow producers to focus on smaller, higher-quality batches, often showcasing the best expression of a harvest, but they also mean availability is limited.

Once it’s gone, it’s gone.
